We took Wesley to the swimming pool last Friday, and he LOVED it! He was splashing and kicking his legs, and after almost 45 minutes in the water, I told Wesley and Adam it was time to go home. I am just the mean old fart.
I am taking him to a baby swimming class this Friday. Hopefully he will have as much fun with me
as he did with daddy!

since we talk about fish, and you got a fish, and you ask for soup recipes; i´l give you recipe of Finnish salmon soup

1 salmon fillet (500 – 600 gr)
1 ½ liters water
1 kg potatoes
2 onions
2 dl cream
1 – 2 tsp salt
10 white / black peppers
3 tbs shredded dill
50 gr butter
(i also add chopped carrots)
Peel and cube the potatoes. Cut each onion into 4 pieces. Pour water into a saucepan and add the salt, peppers, onions and cubed potatoes. Bring to a boil and allow to simmer at a low heat for approximately 15 minutes.
Cut the salmon fillet into 5 - 6 slices. Add the cream and shredded dill to the saucepan. Place the salmon fillet slices in the soup and boil for approximately 5 more minutes. Add the butter and decorate the soup with some shredded dill.
Serve the Salmon Soup hot together with rye bread slices and butter.

3 tablespoons margarine
5 tablespoons all-purpose flour
1 liter milk
150 g finely chopped frozen spinach, thawed and drained
1 teaspoon salt
1 teaspoon sugar
1/8 teaspoon white pepper
4 hard-boiled eggs

Melt margarine in a pot, add flour and mix well with a whisk.

Add about half of the milk and whisk vigurously to get rid of any lumps. Keep whisking until the mixture thickens and begins to boil.

Add the rest of the milk and the spinach, whisk. Allow to boil for a few minutes. Keep stirring often as milk-based soups stick to the bottom of the pot easily!

Add salt, sugar and white pepper, mix.

Divide between soup bowls; peel boiled eggs, halve them, and place two egg halves on top of each bowl of soup.
